苯駢芘簡稱：PAHs 英文：Benzo[a]pyrene 化學式：C20H12 苯駢芘是一種多環芳香族碳氫化合物 PAHs 是環境中存在的污染物，包括空氣、土壤和水等都可能含有 PAHs，在食品烘培、燒烤等烹煮的加工過程中亦會產生 PAHs，尤其脂肪及蛋白質含量高的食品，在受熱的時候產生較多的PAHs，而燒焦食品、油炸過久的食品也會有較多的 PAHs 的含量。
國際癌症研究機構 (International Agency for Research on Cancer, IARC) 已提出多種 PAHs 具致突變性或致癌性，其中以苯駢芘(BaP)之致癌性最強，屬於1級致癌物，即流行病學中確認為人類致癌因子。
苯並芘 PAHs 在生活中的環境都會出現，其中最常與人接觸的管道是從食物中接接觸，此外也會透過吸入空氣中的汙染物或經由皮膚接觸，食物大多為燒烤烹煮類的，空氣大多是吸菸、工廠空汙、汽機車排放的廢氣。
